Sometimes it’s easy to fall into your comfort zone with Indian foods, especially when you’re vegetarian or vegan – and even more so when you don’t have the iron tastebuds to experiment with the spiciest of dishes! So for today’s Spotlight feature we tried this Punjab Jalfrezi cook-in sauce from Kohinoor.
Although the product is not specifically for vegetarians, as it gives cooking instructions on the reverse of the packet with the addition of chicken, we followed the instructions with the vegetarian suggestion of half-boiled potato, cauliflower and carrots. The sauce would also be perfect with your favourite mock meat, we think a chicken substitute would be best, as to not impair the sauce with additional overpowering flavours.

The first thing to strike you as you open up the pouch is the fresh waft of ginger, the sauce is light and flavourful, where often bought curry sauces can taste too heavy and overly rich. Comprised of tomatoes, peppers and fried onions and those bold spices to create the vibrant aroma.
The cooking instructions are easy to follow and results in a delicious, warming, light and tasty curry dish. Serve with basmati rice and your favourite veggie sides! A warm chapati went great alongside ours!
