If there’s one thing sure grab the attention of even the most discerning of vegans, it’s the prospect of a super easy recipe involving the most super of the superfoods, the avocado.
Seriously, this is so damn easy. It’s super delicious and a perfect summer dish, and it takes like 10 minutes. Awesome.
Stuff you need:
- Pasta (duh)
- 1 Avocado (double duh)
- A glug of olive oil
- a couple of tablespoons of lemon juice)
- a pinch of Italian herbs
- 1 clove of garlic
- salt & pepper
And some optional extras…
- sunblushed tomatoes
- chilli flakes
Right, so after you’ve chucked your pasta in to boil (we used linguine, but spaghetti is great too), pop the avocado flesh in a bowl and smoosh it up. Add the salt, pepper, olive oil, crushed garlic and herbs and mix it all up until it’s smooth.
We just used dried Italian herbs (basil/oregano etc) which works fine but obvs fresh will always be extra tasty. Finally, add a squeeze of lemon juice and you’re done!
By this time your pasta is probably cooked, so drain it and then mix the sauce into the pasta. This is pretty much it! We added a handful of peas and another of spinach and then a few sun-blushed tomatoes.
See? So damn easy!
This is great with a sprinkling of chilli flakes for an extra little kick!
